Day 211 – Salads

If you follow the lovely and talented ASM‘s blog, you may have heard about the Salad Challenge going on with our weight loss suppor group.  For the next 90 days, many of us will attempt to eat a salad a day. 

Garbanzo and I started on Friday night.  So far, I am 3/3, but then again, living with a vegetarian can make it a bit easier as we always have produce in the house.  Throw in the abundant veggie garden, and all is well.

Tonight we ate this:

I call it my black bean salad.

Living with a vegetarian, we are constantly looking for ways to add protein into the meals.  And beans are a popular way.  Black beans work really well cold, in my opinion.

To make, I mixed:
2 cans of black beans – drained and rinsed.
1 cucumber peeled and diced
1 red pepper diced
1 green pepper diced
1 small onion diced
1 poblano pepper diced (I used one of mine from my garden.)
4 carrots peeled and diced
4 cloves of garlic minced
2 limes worth of lime juice
salt & pepper to taste
Olive oil to taste

I mixed it together and served it on mixed salad greens and threw some cherry tomatoes on top. 

This is one of those mixtures that just gets better with time to maranade.  Makes probably around 6-8 servings. 

 I have also used this same mixture & added cilantro as a nice kind of salsa for chips too.
(I would have used cilantro too, but I forgot to buy some.)  We like it best for salads though.

  2. Yum! I’ll skip the beans though. I don’t like many kinds of beans. The rest I can definitely dig though. Mmm.
